Summer is almost here and it’s time for beach days, picnics, and barbecues! It’s our favorite time of year, and we have the perfect wine pairings for any occasion!
We want to make sure you’re set for summer, so for the next few weeks we’ll be bringing you our favorite summer recipes and their CRU9 counterparts.
To start you off, we bring you one of our P.R. Chief’s favorite BBQ recipes:
Teriyaki Chicken Skewers
— Pairs with 2017 “As Ever…” Russian River Chardonnay —
For Chicken Skewer:
2 Boneless Chicken Breast
2 cups red and orange bell peppers cut into cubes
2 red onions cut into large cubes
2 tsp olive oil
Salt and Pepper as per taste
For Teriyaki Sauce:
1/4 cup low sodium soy sauce
2 tbsp honey
2 tbsp rice wine vinegar (or Sake!!)
2 tbsp mirin
1 tbsp minced garlic
1/2 tsp red chili flakes (optional)
Soak wooden skewers for 10 minutes (or use metal ones!)
In a bowl, mix up all your sauce ingredients.
In a separate bowl, season your chicken cubes with salt and pepper.
Add two tablespoons of the sauce. Mix well. Cover the bowl and let it marinate for 30 minutes.
Add onions and peppers to the marinated chicken and make sure everything is nicely covered in that tangy sauce.
Thread all chicken and veggies on the skewer. Make sure you leave room on each end to pick them up!
Meanwhile, pour the remaining sauce in a pan and cook it on low-medium heat till until it’s reduced.
Grill the skewer for 3-4 minutes per side or until the meat is done.
Remove the chicken skewers from the grill and baste with the reserved sauce.
Serve with your favorite CRU9 Wine (we reccomend our 2017 “As Ever…” Chardonnay.)
